Land and Sea Skewers
Beef? Check. Shrimp? Double check. Chef Justin and Chad are out on the ranch cooking up Land & Sea Skewers with Florida Beef, Key West Pink Shrimp and Royal Red Shrimp.
LAND AND SEA SKEWERS INGREDIENTS:
8 to 16 Florida cherry tomatoes
8 to 16 Florida mushrooms
2 medium sized Florida zucchini, chunked
2 medium sized Florida yellow squash, chunked
1 pound Large Florida shrimp, peeled and deveined
1 pound beef (your favorite cut) cut into 1 ounce chunks
4 to 8 metal or wooden skewers (be sure to soak wooden skewers in water before use)
1 Florida grapefruit, sliced in half
1 Florida orange, sliced in half
1 1/2 tablespoons low sodium seasoning blend (your favorite)
LAND AND SEA SKEWERS PREPARATION:
1. Make skewers by alternating vegetables and either shrimp or beef.
2. Make sure to keep the shrimp and beef on separate skewers as they will cook at different times.
3. Try to keep all the vegetables flat so everything can touch the grill.
4. Pre heat gas grill or fire up charcoal grill.
5. Make sure to keep the completed skewers in the refrigerator until time to grill.
6. When the grill is ready to cook, season the skewers lightly with the seasoning blend.
7. Add skewers to hot grill.
8. As they cook, squeeze the fresh grapefruit juice over the shrimp, and the fresh orange juice over the beef skewers.
9. Cook on each side for two minutes or until vegetables are crisp-tender and the shrimp is completely done.
10. The beef should be cooked to desired doneness.
11. Remember to pull the skewers off the grill just before desired doneness because they will continue to cook as they rest.
BBQ BUTTER CORN INGREDIENTS:
4 ears Florida sweet corn, shucked
1⁄4 cup unsalted butter
1⁄2 cup BBQ sauce (your favorite kind)
1⁄4 cup fresh chives, chopped fine
BBQ BUTTER CORN PREPARATION:
1. Season the fresh corn with salt and pepper.
2. Cook corn on a hot grill for several minutes or until crisp-tender.
3. Melt butter in a metal bowl over the grill. Add BBQ sauce and chives, stir to combine.
4. When the corn is grilled to desired doneness, add to the BBQ butter bowl.
5. Toss to evenly coat the corn.
6. Serve warm.
