Fried florida mullet
It might be considered a bait fish, but this delicious mullet will slide easily down your gullet. Chef Justin and Chad show you how to make this Florida favorite with a healthy green bean salad.
Fried Florida Mullet with Florida-Fresh Green Bean Salad
Ingredients:
1/2 cup all-purpose natural flour
1/2 cup cornmeal cornstarch
Canola oil for frying
2 large Florida eggs
1 teaspoon water
1/2 bunch flat leaf parsley, chopped
1/4 teaspoon cayenne pepper
Sea salt and fresh ground pepper to taste
4, 6-ounce Florida mullet fillets
1 Florida lemon, sliced
Preparation:
Heat oil to 375 degrees F in deep fryer or deep saucepan. Combine flour, cornmeal, cayenne, parsley, salt and pepper; mix well. Whisk together egg and water in a shallow dish. Season the mullet with a little bit of pepper. Dip fillets into dry mix, then egg wash then back into flour mixture to coat. Deep fry fish in hot oil for 4-5 minutes until fish is golden brown. Drain and serve with lemon slices.
Florida Green Bean Salad
Serves 6-8
Ingredients:
1 1/2 pounds Florida green beans, trimmed and blanched
1 Florida bell pepper, sliced thin
1/2 medium red onion, chopped
¼ cup chopped parsley
1 tablespoon olive oil
Juice from 1/2 a lemon
1 1/2 teaspoon kosher salt
1/2 teaspoon black pepper
Preparation:
Combine all ingredients in a mixing bowl.
Stir to coat.
Taste and adjust seasoning with salt and pepper.
